Italian Bread Salad with Capers & Virgin Oil (Panzanella)

Ingredients

  • 1 loaf ciabatta (cut into cubes)
  • 3 ripe tomatoes (chopped)
  • 1 red onion (sliced)
  • 60 g (2 oz) black olives
  • 28 g anchovies
  • 8 basil leaves
  • 100 ml (3 ½ fl oz) extra virgin olive oil
  • 15 ml (1 Tbsp) lemon juice
  • 15 ml (1 Tbsp) red wine vinegar
  • 1 clove garlic
  • 15 g (1 Tbsp) capers
  • 1/2 bunch Italian parsley

Preparation

  1. Dry bread in oven, mix all herbs vegetables, oils and vinegar together in a bowl. Add the bread, mix well. Leave to marinate for 2 hours
  2. Use ripe tomatoes. Bread should be dry and crispy before you add to salad.
