Italian Bread Salad with Capers & Virgin Oil (Panzanella)

Ingredients
- 1 loaf ciabatta (cut into cubes)
- 3 ripe tomatoes (chopped)
- 1 red onion (sliced)
- 60 g (2 oz) black olives
- 28 g anchovies
- 8 basil leaves
- 100 ml (3 ½ fl oz) extra virgin olive oil
- 15 ml (1 Tbsp) lemon juice
- 15 ml (1 Tbsp) red wine vinegar
- 1 clove garlic
- 15 g (1 Tbsp) capers
- 1/2 bunch Italian parsley
Preparation
- Dry bread in oven, mix all herbs vegetables, oils and vinegar together in a bowl. Add the bread, mix well. Leave to marinate for 2 hours
- Use ripe tomatoes. Bread should be dry and crispy before you add to salad.
