The simplicity of this salad is fantastic. Serve it as a starter or as an accompaniment to grilled meat or fish.

Ingredients

  • 3 large tomato (seeded and chopped)
  • 1 medium cucumber (seeded, peeled and chopped)
  • 1 large red onion (chopped)
  • 1 large green bell pepper (chopped)
  • 1 handful parsley (chopped)
  • 2 g (1/2 tsp) cumin
  • 15 ml (1 Tbsp) lemon juice
  • 30 ml (2 Tbsp) olive oil
  • to taste sea salt
  • to taste black pepper

Preparation

  1. Prepare and chop the vegetables.
  2. add the chopped parsley, cumin, lemon juice and olive oil.
  3. Season with salt and pepper.
  4. serve cold.
