Libian Carrot Salad with Cumin and Lemon
Type of Dish Salad
- 4 large carrots (large dice)
- 8 g (½ Tbsp) cumin seeds
- 30 ml (2 Tbsp) extra virgin olive oil
- 10 g (3/4 Tbsp) chopped fresh garlic
- 15 ml (1 Tbsp) lemon juice
- 15 g (1 Tbsp) fresh parsley (chopped)
- 15 g (1 Tbsp) whole coriander leaves
- Steam carrots and let them cool. Then place into a bowl with the rest of the ingredients. Mix and allow it to marinate in the fridge for a few hours before serving.
Preparation Time is approxmiately 20 minutes.
Cooking Time is approxmiately 1 hour.
