  • 800 ml Japanese dashi stock
  • 80 g inaka miso
  • 20 g foie gras
  • 5 ml truffle oil
  • 100 ml milk


  1. Heat up the dashi, in a food processor, add the miso, truffle oil and foie gras, blitz until smooth
  2. Warm up milk with a little truffle oil, make a froth with a hand held electric mixer.
  3. serve the soup in a cappuccino cup with shaved black truffle on top of the froth
