Forest Berries with Zabaglioni

Ingredients

  • 4 egg yolks
  • 20 g (4 tsp) sugar
  • 60 g (4 Tbsp) Marsala
  • 15 ml (1 Tbsp) water
  • 100 g (¼ lb) raspberries
  • 100 g (¼ lb) strawberries
  • 100 g (¼ lb) blueberries
  • 100 g (¼ lb) blackberries
  • 100 g (¼ lb) red currents
  • 4 sprigs fresh mint
  • 15 g (1 Tbsp) icing sugar

Preparation

  1. Whisk the yolks, sugar, Marsala and water together over a double boiler until thickened like pudding (takes about 10 minutes). Take on and off the heat from time to time while cooking so as not to scramble the eggs.
  2. Mix the berries together and divide between 4 serving bowls. Spoon the zabaglioni sauce over the top of the berries. Use a gas burner to lightly color the surface of the sauce. Garnish with fresh mint, a sprinkle of icing sugar and a few red currants and serve immediately.
