Beef Satay Marinade

Ingredients

  • 20 ml (2 Tbsp) tomato paste
  • 45 g (3 Tbsp) tomato sauce
  • 15 g (3 tsp) curry powder
  • 3 g (1/2 tsp) chili powder
  • 5 g (1 tsp) garam masala
  • 10 g (2 tsp) ground cumin
  • 1 clove garlic
  • 45 g (3 Tbsp) white vinegar
  • 20 ml (2 Tbsp) vegetable oil
  • 5 ml (1 tsp) soy sauce
  • 15 ml (1 Tbsp) water
  • to taste salt
  • to taste pepper
  • 45 g (3 Tbsp) vegetable oil (extra)

Preparation

  1. Trim fat from meat, cut meat into strips approx 2 1/2 cm thick, then cut each strip into 5mm pieces.
  2. Mix marinade ingredients together (except for extra oil) and add to meat. Let stand for 3 to 4 hours.
  3. Drain marinade from meat and reserve marinade for sauce.
  4. Thread meat on bamboo skewers. Cook under a hot grill for 8 to 10 minutes. Turn skewers frequently, brushing with extra oil and serve with Sate Sauce.

Sate Sauce

Ingredients

  • 30 g (2 Tbsp) butter
  • 1 medium onion (chopped)
  • 60 g (4 Tbsp) peanut butter
  • 2 g (1/2 tsp) chili powder
  • 150 ml (1/3 cup) malt vinegar
  • 45 g (3 Tbsp) sugar
  • 10 ml (2 tsp) soy sauce
  • to taste salt
  • to taste pepper
  • 200 ml (1 cup) chicken stock
  • 45 ml (3 Tbsp) oil

Preparation

  1. For Sate Sauce: Heat butter in pan add chopped onion, saute until onion is golden brown, add remaining ingredients and mix well. Add reserved marinade, simmer uncovered 5 minutes or until sauce is thick.
